I'm going to be honest with you - I used to turn my nose up at Split Pea soup. I've even had it at the Famous Anderson's Split Pea Soup restaurant and thought it mehh!

Then one day, I had a left-over ham bone and my sister begged me to make her split pea soup. I tried it and fell in love with my homemade version. This soup is now part of my soup-making rotation. My husband loves it!

Split peas are exactly that - peas that have been dried and they naturally split upon drying. They are rich in fiber and vitamin B. Great for lowering your cholesterol!!!

An added plus is it is also economical. A pound of split peas cost me $0.77, carrots $.75, onion $.50, water, ham (optional) $5, chicken stock (free since it was a by-product of me making chicken for dinner) bay leaf and pepper - are pennies.

2 T. olive oil
1 large onion - diced
3-4 carrots - cut into coin (round) or however you like.
1 large garlic clove
4-6 Quarts of filtered water (If I have a ham bone - 6 qts, here I did 4 qts)
1 Quart of chicken stock (optional) but adds nice flavor
2 bay leaves
2 1/4 C. dried split peas
1 t. ground pepper

Add olive oil to pan on medium heat, onion. Sautee onion, later add chopped up garlic. Add water, chicken stock, bay leaves, cubed ham (if I add the bone - it usually has lots of ham attached, I let it boil for a bit in the soup water then take it out and take off the ham and put it back into the stock pot). Add bay leaves and pepper. When the split peas have softened then add the carrots.
